Fermentation: Steel tanks; Siembra Azul fermentation, like every tequila made at NOM 1414, is serenaded by classical music. The yeast, which is specially designed for tequila production (hence Induced), seems to respond to the rhythm as it bubbles in large steel tanks. It’s not exactly traditional, but the yeast is having a good time.

Tasting Notes: Bright citrus and cooked agave turn to a sweet grassy note. This is all balanced nicely on the palate with a kick of black pepper. A note of anise and crushed cinnamon start to develop on the back palate. This is a nice crisp finish with agave nectar and cucumber skins.

About: Siembra Azul’s agave is sown in the red clay soil of the Highlands region of Jalisco, where proud tequileros produce approachable, citrusy tequilas. Produced at the Vivanco family distillery in Arandas, Siembra Azul explores the impact of music in production and highlights the Highlands’ distinctive terroir. Every agave used in both of this expression’s constituent tequilas was grown on the same plantation. The terroir presents differently after their respective productions, but the blend is a layered experience in the terroir of that single plantation, La Poblada.

This time-honored blanco is our flagship representation of the Highlands region. Pristine, floral, and herbaceous, it’s distinctly Highlands in terroir.
